wenn ich einen Meddling Mage kopiere, z.B. durch Phantasmal Image oder Fated Infatuation , kann ich dann einen neuen Namen wählen oder wird der beim spielen des Meddling Mage genannte mitkopiert?

Du kannst neue Namen auswählen. Bei der Fähigkeit des Mage handelt es sich um einen EtB-Trigger und der löst Replacement, das sowohl beim Image als auch bei der Infatuation genauso gilt aus als würde ein "echter" Mage das Feld betreten.
Edit: Stimmt natürlich, das ist kein EtB, siehe unten. Da hab ich falsch geschaut, der gewünschte Effekt tritt trotztdem ein.

Der Meddling Mage hat keinen EtB Trigger, das ist ein Replacement Effekt. Das ist für die Frage oben zwar irrelevant, da es mit den Kopien trotzdem funktioniert, macht aber insofern einen Unterscheid, dass wenn der MM das Spielfeld betritt die Fähigkeit den Stack nicht verwendet und damit auf das Nennen der Karte nicht reagiert werden kann.
Ist das wirklich ein ETB-Trigger? Ist es durch das Schlüsselwort "As" statt "When ... comes into play" nicht eher so, dass die Auswahl vor dem ins Spiel kommen getroffen wird und sich dann statisch auswirkt, sobald der Mage das Spielfeld betritt? Denn wäre es ein Trigger, könnte man auf die Auswahl reagieren (z.B. falls er Lightning Bolt oder StoP verbieten will, ihn vorher noch mit dem Spruch umbringen), was mWn aber nicht funktioniert.
Ändert aber natürlich nichts daran, dass man dennoch eine neue Wahl treffen darf!
Nein ist kein trigger, ist ein replacement effect (trigger sind erkennbar am "at", "when" oder "whenever")
"As" ist ein Indikator für replacement effects
614.1c Effects that read “[This permanent] enters the battlefield with . . . ,” “As [this permanent]
enters the battlefield . . . ,” or “[This permanent] enters the battlefield as . . . ” are replacement
effects.

Such effects may come from the permanent itself if they affect only that permanent (as opposed to a
general subset of permanents that includes it). They may also come from other sources. To
determine which replacement effects apply and how they apply, check the characteristics of the
permanent as it would exist on the battlefield, taking into account replacement effects that have
already modified how it enters the battlefield (see rule 616.1), continuous effects generated by the
resolution of spells or abilities that changed the permanent’s characteristics on the stack (see rule
400.7a), and continuous effects from the permanent’s own static abilities, but ignoring continuous
effects from any other source that would affect it.
Example: Voice of All says “As Voice of All enters the battlefield, choose a color” and
“Voice of All has protection from the chosen color.” An effect creates a token that’s a copy
of Voice of All. As that token is put onto the battlefield, its controller chooses a color for it.
